There are days when you feel like eating curry. Today was one of those days. Our mothers have awesome curry recipes but I prefer something simple. I prefer to use ingredients that I know for sure will be in my fridge. I don't use spices or curry leaves. I call this; Lazy Curry.
Usually I will eat Lazy Curry with rice or roti kirai but today feels more like a roti prata kinda day. So I used Spring Home's prata and it was awesome! It was soft and fluffy, just how I like my prata.
Previously, I used to purchase those instant pratas which were cooked and packed. Those don't taste so good and they end up being very tough and not appetizing. This kind of pratas are better. I just used a dash of oil to fry it. Very very little oil. The inside looks like this(picture below). However, don't make the same mistake as me. I took it out from the freezer and left it out for quite some time. When it was time to fry, it was all sticky. Keep it chilled until frying time.
RECIPE:
(I don't really have fixed quantities for the ingredients. It's up to you to put more of what you like)
Items to Blend (I usually blend more than I need so I can store the rest in the fridge for future usage)
- garlic (a few cloves depending on the serving size)
- red onions (a few depending on the serving size but usually more than the amount of garlic. E.g. I f i add 4 garlic cloves, I would add 4 big onions)
- chili padi(depends on how spicy you want your curry to be. Bear in mind that some curry powders are spicy)
1) Add the blended items into hot oil(I usually use just a little oil). Fry for awhile. You don't have to wait till it dries.
2) Add curry powder. (I usually use Baba's Curry Powder)
3)Stir and mix it all together.
4) Add chicken.
5) Add a little water. (the mixture is supposed to be thick even after adding water)
6) Add milk(I use full cream because I usually have those on hand for Adam) and a little plain yogurt(I just add a few teaspoons, very minimal)
7) Season with salt.
8) Let the chicken cook. When its halfway cooked, add potatoes and carrots.
9) Serve while it's hot!
